Singapore Style Noodles...
As most of you know I am a self proclaimed foodie, I LOVE to cook and I LOVE to collect cook books and recipes! I have a couple that I seem to be using quit a lot lately and thought I would share them here and maybe inspire you to give them a try.
The first is INDIAN FOOD MADE EASY by Anjum Anand. It is actually a cook book based on the BBC cooking show of the same name. You can find the show's homepage HERE. You should be able to find a good number of recipes from the book on the site!
This is really nicely layed out cookbook with easy to follow directions and hints and tips about things you should have if you want to cook Indian food. The book is broken up into sections (Snacks, Chicken, Meat, Seafood, Veggies, Lentils/Beans, Bread/Rice, Raitas/Chutneys, Drinks/Desserts) and most importantly the recipes are top notch and yummy! If you love Indian food this is definitely a must have for your collection!!
The second cookbook is CHINESE FOOD MADE EASY. This is another book based off a BBC program by the same name and you can find the homepage and recipes from the book HERE. I bought myself a hand hammered (is that what they are called??) wok not to long ago at a Chinese grocery downtown and wanted to find a book that would provide me with some great inspiration. This book has definitely filled that order and more. Like the Indian cookbook, this one is very nicely layed out with easy to follow directions and lots of yummy photos!
This book is split up into nifty chapters (Takeaway Favorites, Spicy Sichuan, Dumplings and Dim Sum and Noodles, Fish/Seafood, Street Food, Celebration Foods, Desserts/Drinks, Side Dishes) It also includes chapters about cooking techniques and store cupboard and a menu planner. If you love Chinese food then this would be a great addition to your collection.
Alright then, now I have a rawking recipe from from the Chinese Food Made Easy book. I made these noodles last night and they were to DIE for!! They really didn't take very long (most of the time is spent with chopping the ingredients and getting them ready.) I recommend you get everything chopped and set out before you start because once you heat the oil it is a fast process!
SINGAPORE STYLE NOODLES
Preparation time less than 30 mins
Cooking time less than 10 mins
Serves 2
*Ingredients*
2 tbsp groundnut oil
1 tbsp grated fresh root ginger
1 red chilli, de-seeded, finely chopped
5 fresh shiitake mushrooms, sliced
1-2 tbsp ground turmeric
175g/6oz raw tiger prawns, shelled and deveined.
100g/3½oz smoked bacon, finely chopped
1 red pepper, de-seeded and sliced
1 handful julienned carrot strips
1 handful beansprouts
100g/3½oz cooked chicken breast, shredded
250g/9oz dried vermicelli rice noodles, pre-soaked in hot water for 10 minutes and drained
1 tsp crushed dried chillies
2 tbsp light soy sauce
2 tbsp oyster sauce
1 tbsp clear rice vinegar or cider vinegar
1 free-range egg, beaten
dash toasted sesame oil
2 spring onions, sliced lengthways
*Method*
1. Heat a wok until smoking and add the groundnut oil, then stir fry the ginger, chilli, mushrooms and turmeric for a few seconds.
2. Add prawns and cook 1 min, add the bacon and cook for 15-20 seconds, then add the red pepper, carrots, beansprouts and cooked chicken. Stir-fry for one minute.
3. Add the noodles to the wok and toss for 1-2 minutes, then season with the chillies, soy sauce, oyster sauce and vinegar. Stir well to combine.
4. Pour the beaten egg into the wok and stir gently for one minute, or until the egg is cooked through. Season with a dash of sesame oil, then pile the stir-fry onto a serving plate and garnish with the sliced spring onions.

oh I love to watch those cooking shows. Hope these books will also be translated in dutch...sigh...some more for my collection (only have about a hundred)

Indian food is one of my absolute favorites! Thanks so much for the book recommendation- I've never been able to make it taste as good at home as in my fav restaurants. LOL :)
P.S. I'm probably due for another bump photo...I'll have to add that to my Project 365 each week!
